
Chicken & Mushroom Pasta – Meal Prep Favourite

Need a quick and delicious meal prep idea that works for both dinner and lunch the next day? This creamy tomato chicken and mushroom pasta is full of flavour, packed with protein, and gives your body a good dose of micronutrients to support energy, immunity and hormonal balance.
Ingredients:
2 chicken breasts
1 tbsp olive oil (optional)
1 onion, chopped
1 cup mushrooms, sliced
1 cup peas
400g passata
1 tbsp tomato paste
2 garlic cloves, minced
Salt, pepper, mixed herbs to taste
300g cooked fusilli pasta
Handful of grated cheddar or parmesan to serve
Method:
Cook pasta and set aside.
In a pan, sauté onion, garlic and mushrooms until soft.
Add diced chicken, cook through, then stir in peas, passata, tomato paste, herbs, salt and pepper.
Let simmer for 10–15 mins until sauce thickens.
Stir in cooked pasta, top with cheese.
Serve half hot for dinner and box up the rest for lunch!
