Chicken & Chickpea Salad Bowl Recipe

A balanced bowl of colour, crunch, and serious nutrition.
This high-protein chicken salad is perfect for busy women who want fuss-free food that fuels.

🛒 Ingredients (Serves 1)

1 little gem lettuce

1 chicken breast (grilled or air-fried)

50g cherry tomatoes

50g cucumber

50g mixed peppers

1 egg (boiled)

50g roasted chickpeas

100g roasted baby potatoes (air-fried with garlic, rosemary, salt & pepper)

50g low-fat coleslaw

20g low-fat French dressing

🍳 Method

Cook chicken and chickpeas until golden and crispy.

Roast potatoes in your air fryer or oven.

Boil your egg and slice.

Chop all your fresh veggies and plate up.

Add coleslaw, dressing, and top with potatoes and chickpeas.

Done. Boom.
