Ingredients (Serves 2):

3 scoops of organic oats (approx. 150g)

10g flax seeds

10g chia seeds

2 scoops chocolate protein powder

2 eggs

1 ripe banana

Splash of organic milk (adjust to desired consistency)

Frozen blueberries (for the compote)

Optional: drizzle of honey to taste

Low fat Greek yoghurt (to serve)

Method:

Add oats, flax seeds, chia seeds, protein powder, banana, eggs and milk to a blender.

Blend until a smooth batter forms.

Pour small rounds into a non-stick pan and cook on medium heat until bubbles form, then flip.

While pancakes cook, simmer frozen blueberries in a pan with a splash of water and optional honey until they form a warm compote.

Stack pancakes, spoon over compote and serve with a dollop of Greek yoghurt.
