Chicken Stroganoff Recipe
Serves: 6
Time: 30 minutes
Ingredients:

2 chicken breasts, sliced into strips

1 leek, finely sliced

2 cloves garlic, minced
-
200g chestnut mushrooms, sliced
-
100g peas
-
2 handful spinach
-
250ml chicken stock
-
300g low-fat crème fraîche
-
1 tsp thyme (fresh or dried)

1 tsp olive oil
-
Salt & pepper to taste
Method:
1️⃣ Heat olive oil in a pan over medium heat. Add the chicken and cook until lightly browned.
2️⃣ In the same pan, add the leeks and garlic, cooking until soft and fragrant.
3️⃣ Add the mushrooms and thyme, cooking for 5 minutes until softened.
4️⃣ Pour in the chicken stock and bring to a simmer. Add the peas and return the chicken to the pan. Cook for another 5 minutes.
5️⃣ Stir in the crème fraîche and mix well. Let it cook for a couple of minutes, then add the spinach and allow it to wilt.
6️⃣ Season with salt and pepper to taste. Serve with rice, pasta, or just enjoy as is!
