
High Protein Chicken Meatballs with Pasta & Tomato Sauce

This hearty, protein-packed dish is ideal for a nutritious dinner and makes a brilliant leftover lunch. It’s balanced, satisfying, and bursting with goodness.
Serves 4
Ingredients:
For the Meatballs:

500g chicken mince
-
1 onion, finely chopped
-
1 egg
-
30g flour
-
Garlic powder, pepper, salt

1 slice of breadcrumb
For the Pasta & Sauce:

60g dry pasta per person (240g total)
-
300g passata
-
Garlic, pepper, mixed herbs
-
40g parmesan + 40g cheddar (grated, for topping)
Method:

Mix the meatball ingredients and roll into balls. Pan fry or oven bake until cooked through.

Cook pasta as per instructions.

In a saucepan, simmer passata with garlic and herbs to make your sauce.

Combine everything, top with cheese, and serve!
