How to make it:
Chop and roast your sweet potatoes with a little olive oil, salt, and pepper (about 30 mins).
Meanwhile, cook chopped red onion with lean beef mince until browned.
Add chopped asparagus, broccoli and green beans, season with fajita spice or harissa, and cook until veg is tender.
Plate up with the roasted sweet potato. This makes 4 portions so you’ve got tomorrow’s lunch sorted too.
