Nourishing Chicken & Chickpea Curry – Packed with Vitamins & Flavour 🍛💗

🛒 Ingredients:

  • 2 chicken breasts or thighs, diced

  • 1 tin chickpeas, drained and rinsed

  • 2 onions, finely chopped

  • 2 handfuls spinach

  • 1/2 head cauliflower, broken into florets

  • 1 pepper, chopped

  • 2 potatoes, diced

  • 2 tsp cumin

  • 1 tsp coriander

  • 1 tsp paprika

  • 1/2 tsp chilli powder (adjust to taste)

  • 3 cloves garlic, minced

  • 1 inch fresh ginger, grated

  • 1/2 tsp cinnamon

  • 1 tbsp garam masala

  • Salt & pepper to taste

  • 1 tin chopped tomatoes

  • Water or chicken stock (as needed)

For the topping:

  • 2 tbsp fat-free Greek yoghurt

  • 1 tbsp fresh mint, finely chopped


👩🍳 Method:

  1. Heat a little oil in a large pan. Sauté onions until soft, then add garlic, ginger, and all spices. Cook for 1-2 mins until fragrant.

  2. Add chicken and cook until sealed on all sides.

  3. Stir in potatoes, cauliflower, pepper, chickpeas and chopped tomatoes. Add a splash of water or stock if needed.

  4. Simmer gently for 30–40 minutes, until everything is tender.

  5. Stir through spinach in the last 5 minutes.

  6. Mix mint into Greek yoghurt and serve on the side.
