Looking for a fuss-free midweek dinner that’s healthy, hearty and full of flavour? This Turkey Mince & Rice Bowl is a staple we keep coming back to. It’s packed with lean protein, fibre-rich veggies and complex carbs to fuel your evening without the bloat.
Not only does it come together quickly (we're talking 20–25 minutes tops!), but it's also easy to batch cook and reheat. Perfect for anyone juggling work, kids, gym sessions—or all three!
🌿 Ingredients:
1 red onion, chopped
500g turkey mince
1 tbsp fajita seasoning
2 garlic cloves, crushed
Salt & pepper to taste
1 head of broccoli, chopped
100g asparagus, chopped
250g cooked wholemeal rice (125g per serving)
Optional: dollop of low fat Greek yoghurt
🍳 Method:
Sauté the red onion in a pan until softened.
Add the garlic and turkey mince. Cook until browned.
Stir in fajita seasoning, salt and pepper.
Add broccoli and asparagus. Cook until veggies are tender.
Serve over 125g of cooked wholemeal rice.
Top with a spoon of Greek yoghurt, if you like!
