Ingredients (Serves 4):
500g beef brisket
2 onions, sliced
3 large carrots, chopped
1 beef stock cube
2 garlic cloves, minced
1 tsp rosemary
Salt & pepper to taste
600g potatoes (for mash)
20g butter (or alternative)
50ml milk or cheese
Greens: broccoli, green beans or cabbage

Gravy granules (or homemade gravy)
Method:
Add onions, carrots, beef brisket, stock cube, garlic, rosemary, salt, and pepper into a slow cooker.
Cook on low for at least 6 hours until beef is tender and easy to pull apart.
Boil potatoes until soft, then mash with butter and milk (or cheese) and season to taste.
Steam greens just before serving.
Remove beef, let it rest, then shred and return to the slow cooker. Stir in gravy granules or your own gravy.
Serve with a generous helping of mash and steamed greens.
