Ingredients (serves 2):

4 scoops oats (200g)

1 scoop vanilla organic protein powder (20g protein)

20g chia seeds

20g flaxseeds (milled)

2 eggs

Milk (to consistency)

Frozen pineapple & mango (for coulis)

Low fat Greek yoghurt
Method:

Blend oats, protein powder, chia, flaxseeds, eggs, and milk until smooth.

Cook small pancakes in a non-stick pan until golden.

Simmer frozen pineapple and mango in water until soft. Blend into a coulis.

Serve pancakes with coulis and Greek yoghurt.
