Collagen Cooking Series: Chicken Stroganoff

This recipe is the reason I wanted to start my Collagen Cooking Series. Real food, proper meals and simple ways to include collagen consistently, without changing how food tastes or feels.
Chicken Stroganoff is comforting, filling and naturally suited to collagen because it is cooked in stock and finished with a creamy sauce. Vigor Collagen dissolves straight in, making this an easy, no effort way to boost protein and support joints, skin and gut health through everyday meals.
Chicken Stroganoff With Added Collagen 💗
Ingredients
- Large pack chicken thighs
- 3 leeks, sliced
- Large pack mushrooms, sliced
- Garlic
- Fresh or dried thyme
- Salt and black pepper
- 100g Peas
- Chicken stock (enough to cover ingredients)
- 16g Vigor Collagen
- Crème fraîche
- Rice, to serve
How to make
- Cook the rice separately and set aside
- In a large pan, cook the chicken thighs until lightly golden
- Add the leeks, mushrooms and garlic and cook until softened
- Season with thyme, salt and plenty of black pepper
- Pour in chicken stock and add the peas, then simmer until the chicken is fully cooked
- Stir in the collagen and mix well until fully dissolved
- Finish by stirring through crème fraîche just before serving
