Collagen Cooking Series: Crispy Collagen Cauliflower with Salmon and Veggies

This one is simple, nourishing, and exactly how I eat midweek when I want something comforting but still supportive.
Salmon, crispy roasted cauliflower, tenderstem broccoli and green beans. No complicated sauces, just good ingredients doing their thing.
Ingredients
- Salmon fillets
- Whole Cauliflower
- Tenderstem broccoli
- Green beans
- Olive oil
- Garlic granules
- Chilli flakes
- Salt
- Black pepper
- 8g Vigor Collagen
Optional to serve
Rice, potatoes or quinoa
How to make it
- Break the cauliflower into florets and add to a bowl with olive oil, garlic granules, chilli flakes, salt and pepper
- Stir through 8g Vigor Collagen (around 7g added protein, with no taste)
- Air fry at 180°C for 20–25 minutes until soft, golden and slightly crispy
- Cook the salmon skin side down in a pan with the lid on, or wrap in foil and bake until just cooked through
- Dry fry (or lightly oil) the broccoli and green beans until tender with a bit of bite
Serve as is, or add carbs if you need them. Rice, potatoes or quinoa all work well.
